    Montanhas do Espírito Santos is Brazil’s second-largest coffee producing state, upholding pleasant surprises for coffee beans seekers like The Coffee Quest. Indeed, situated at the heart of the region, in the city of Castelo, we discovered a gem: a family farm, a Cup of Excellence participant – Sítio Bateia, operated by Vagner Dias Sartori.

    We can see that decaffeination techniques are not the only relevant ingredient for a good Decaf. The quality of the product you put in the liquid baths also plays an important role. Bad quality green beans from old crops are almost a standard in decaffeination. Starting with a low-quality coffee is questionable, as the process is not enhancing any flavours for your final cup of coffee. 


    In 2020, The Coffee Quest successfully sent a shipment to our partner in Germany for decaffeination, so we are continuing this in the following years as well. After checking the different styles of decaffeinating the choice fell on CO2 decaffeination. The flavour profile loses some intensity, but it keeps all of the original flavours (scoring only a pointless on the SCA scale).


    A good result that indicates we are able to provide the exact same coffee, with and without caffeine. Good ingredients make it possible to produce high-quality decaf, enjoyable to drink at any time. Even with a caffeine allergy or high sensitivity, people are able to drink specialty coffee.
